
PASTA SALAD & BALSAMIC VINAIGRETTE
(SERVINGS: 4)
Ingredients
- 4 cups (1L) cooked pasta of your choice
- 4 cups (1 L) arugula
- 2 cups (500 ml) grape tomatoes, halved
- 1 avocado, diced
- 120 g fresh mozzarella, in pieces (or mini bocconcini)
- 1/3 cup (85 ml) maple-balsamic vinaigrette
Preparation
Mix all ingredients in a large bowl and serve.
If the salad is prepared in advance, wait until last moment to add the avocado.
