
GREEN APPLE & FETA PASTA SALAD
(SERVINGS: 2)
Ingredients
For the salad
- 2 cups (500 mL) cooked, rinsed, and cooled whole grain farfalle (bow-tie pasta)
- 4 cups (1 L) spring mix, chopped
- 1 green apple, thinly sliced
- 60g crumbled feta cheese
- 1/4 cup (60 mL) pumpkin seeds
- 2 tbsp (30 ml) hemp seeds
- 3 tbsp (45 mL) olive oil
- 1 tbsp (15 mL) apple cider vinegar
- 1 tbsp (15 mL) basil pesto
- 2 tsp (10 mL) honey
Preparation
- Combine pasta, lettuce, and apples in a large bowl. Set aside.
- In another bowl, mix all the ingredients for the dressing.
- Add the dressing to the salad mix and mix well.
- Top with feta, pumpkin seeds and hemp seeds.
