AVOCADO TOAST - 4 WAYS

Ingredients - The Classic

  • 1 slice of bread
  • 1/2 avocado, mashed
  • 2 tsp (10 ml) lemon juice
  • A pinch of salt
  • Ground pepper or chili flakes, to taste

 Preparation

Toast the slice of bread in the toaster.

When it's golden brown, spread the avocado puree evenly over it. Pour in the lemon juice and season with salt, ground pepper, or chili flakes.

Ingredients - Tomato and feta

  • 1 slice of bread
  • 1/2 avocado, mashed
  • 2 tsp (10 ml) lemon juice
  • 2 tbsp (30 ml) chopped tomatoes
  • 1 tbsp (15 ml) crumbled feta cheese
  • 1 tsp (5 ml) balsamic vinegar
  • Ground pepper or chili flakes, to taste

*In this version, adding salt is less recommended since the feta cheese is already salty. You can taste and add more if needed.


 Preparation

Toast the slice of bread in the toaster.

When it's golden brown, spread the avocado puree evenly over the top and drizzle with lemon juice. Garnish with the tomato chunks, crumbled feta cheese, balsamic vinegar, and ground pepper or chili flakes.

Ingredients - Poached egg and avocado

  • 1 egg
  • 1/2 tsp (2.5 ml) white vinegar*
  • 1 slice of bread
  • 1/2 avocado, thinly sliced
  • 2 tsp (10 ml) lemon or lime juice
  • A drizzle of olive oil, to taste
  • 1 tsp (5 ml) parsley, finely chopped
  • A pinch of salt
  • Ground pepper or chili flakes

 Preparation

Crack the egg into a bowl and set aside.

In a saucepan, heat water, white vinegar, and a generous pinch of salt until it bubbles. Using a wooden spoon, create a small swirl and pour the egg into the center. Let it cook for about 5 minutes.**

Meanwhile, toast the slice of bread in the toaster.

When the egg is ready, remove it from the water and place it on a paper towel or clean table cloth to absorb the excess water. Set aside.

On the golden toast, place the avocado slices, lemon juice, and egg. Finish with a drizzle of olive oil, chopped parsley, salt, and ground pepper or chili flakes.

* White vinegar helps the egg white coagulate more quickly. This ensures a more beautiful poached egg and that you don't waste too much egg white.

** If you don't want to poach your egg, you can prepare it another way without any problem.

Ingredients - Egg and Zaatar

  • 1 egg
  • 1 slice of bread
  • 1/2 avocado, mashed
  • 2 tsp (10 ml) lemon or lime juice
  • 2 tsp (10 ml) Zaatar spice - Fattoush Girls
  • A drizzle of olive oil
  • A pinch of salt

 Preparation


Place the whole egg in a pot filled with water and bring to a boil. When the water is simmering, cook for 7 minutes. Remove from heat immediately and cool in an ice water bath. Set aside.

Meanwhile, toast the slice of bread in the toaster.

Peel the egg and cut it in half.

On the golden toast, place the avocado puree, the lemon juice, the two egg halves and the Zaatar spices . Garnish with a drizzle of olive oil, a pinch of salt and serve.
