FRUITY SALMON TARTARE
(SERVINGS: 2)
Ingredients
- 2 tsp (10 ml) mayonnaise
- 1 tbsp (15 ml) cranberry, raspberry, blueberry and green tea vinaigrette
- 3-4 large strawberries, diced
- ¼ avocado, diced
- 2 tbsp (30 ml) finely chopped red onion
- 3 tbsp (45 ml) roasted walnuts, chopped
- 300g fresh skinless salmon, diced
Preparation
In a small bowl, mix the mayonnaise and vinaigrette with a small whisk until smooth. Refrigerate.
Chop the strawberries, avocado, red onion, walnuts, and salmon and place everything in a large bowl.
Add the sauce and mix gently to coat well.
Serve with croutons.
