
We LOVE strawberries in a salad... especially when they're paired with bocconcini, maple granola, and balsamic vinaigrette! It's the perfect sweet and savory salad for summer.
STRAWBERRY, BOCONCCINI & MAPLE SALAD
(SERVINGS: 4)
Ingredients
- 2 cups (500 ml) baby spinach
- 2 cups (500 ml) arugula
- 1 cup (250 ml) sliced Quebec strawberries
- 1/2 cup (125 ml) maple granola - Granolust
- 3/4 cup (185 ml) sliced boconccini
- 1/4 cup (60 ml) of balsamic & maple vinaigrette - The Cannery
- 3 tbsp (45 ml) water
- Salt & pepper to taste
Preparation
In a large bowl, combine the baby spinach and arugula. Add the strawberry slices, boconccini slices, and maple granola , and toss gently.
In a small bowl, mix the balsamic & maple vinaigrette with the water.
When ready to serve, pour the dressing over the salad and season.
