
OATMEAL AND BLUEBERRY JAM BARS

Ingredients
Jam
- 2 cups (500 ml) blueberries
- 2 tbsp (30 ml) chia seeds
Dough
- 2 cups (500 ml) oatmeal
- 1 cup (250 ml) whole wheat flour
- ½ cup (125 ml) date sugar
- ½ tsp (2.5 ml) cinnamon
- 1 pinch of salt
- 1/3 cup (85 ml) softened butter (or coconut oil)
- 1/3 cup (85 ml) unsweetened fruit compote
Preparation
Preheat oven to 350°F (180°C).
In a saucepan over medium-high heat, bring the blueberries to a boil while crushing them.
Reduce heat and simmer for about 5 minutes. Remove from heat, add chia seeds and stir well.

In a bowl, mix the oatmeal, flour, date sugar, cinnamon and salt.
Add the butter and compote and mix until you get large lumps of dough.
Press half of the mixture into an 8 x 8 Pyrex dish lined with parchment paper.
Pour the jam and spread evenly.
Add the remaining oat mixture on top so that all the jam is covered and
press lightly.
Bake for 30 minutes or until the top is golden brown and crispy.
Allow to cool before cutting into bars.
