
ASPARAGUS WITH ZAATAR SPICES AND SOFT-BOILED EGGS

Ingredients
- 500 g of asparagus
- 1 tbsp (15 ml) olive oil
- 1 tbsp (15 ml) Zaatar spices - Les filles fattoush
- The juice and zest of one lemon
- 2 eggs
- 1 tbsp (15 ml) white vinegar
- Salt and pepper, to taste
- Country bread croutons, if desired
Preparation
Trim the asparagus and cut them in half lengthwise.
In a skillet, heat the olive oil over medium heat. When hot, add the asparagus and Zaatar spices and cook for about 5 minutes, stirring regularly.
Add the lemon juice and zest, season with salt and pepper, and remove from heat. Keep warm while preparing the eggs.
To prepare the soft-boiled eggs, heat a saucepan of water until it simmers gently. Add the white vinegar and generously salt the cooking water.
Using a spoon, create a small whirlpool in the water and gently crack the eggs into it. Cook for 6 minutes.
When the eggs are ready, remove them from the water and place them on a paper towel or clean cloth to remove excess water. Season with salt and pepper.
Place the soft-boiled eggs on the asparagus and serve immediately.
